Aurum: the first Limited Edition Palazzo di Varignana oil, with the best of the 2023/2024 olive oil season packed into 360 bottles. A quality product with great complexity, as well as aromatic and flavor balance, obtained from a zero-km integrated supply chain that tells a story of love for nature.

Aurum comes from a careful selection of the best olives of the Maurino cultivar, giving it unique organoleptic properties and characteristics. The result is a superb oil that expresses the uniqueness of our region. This extra virgin olive oil immediately stands out with its complex structure and intense fruity character with broad herbaceous notes of green apple; on the palate, it is characterized by a varietal flavor profile with a perfect balance between bitterness and spiciness.

Confirming its uniqueness, Aurum will vary every year: depending on the course of the oil season, expert oil experts will select the best fruits from the farm's 265 hectares of olive groves and collect them in a special bottle. Each Limited Edition will thus have its own identity, which will translate each season into a different oil, like a palette composed of various shades of green, aromas and olfactory tones.
