Palazzo di Varignana Food

Palazzo di Varignana is a project hinged around the recovery and regeneration of historic buildings, abandoned rural lands, and farmhouses along with crops that have been discontinued. Founded in 2015, our agricultural estate stretches today over 650 hectares of land. Thanks to the restoration of the ancient varieties of native olive trees, extending for over 265 hectares, we are proud to produce one of the most awarded and recognized extra virgin olive oil in the world.

100% ITALIAN EVO OIL 2023/2024

Our love and respect for the land have led us to choose the most representative cultivars of Emilia-Romagna, such as Ghiacciola and Nostrana. These, together with the Frantoio and Leccino varieties, make up about half of the oil crops. The other half of the olive groves contain cultivars from central Italy, such as Maurino and Leccio del Corno. This gives rise to a collection of extra virgin oils that is renewed every year: five monocultivars - Brisighella D.O.P, Claterna Organic, Vargnano, Pandesco Organic and Stiffonte - and two multivarietals - of which Organic. Our Oils stand out for their great complexity, aromatic and taste balance, products of excellence from an integrated km0 supply chain that tell a love story with nature.

Agri-food products

Within the Palazzo di Varignana estate, the land not naturally suited to olive growing has been used for other crop production. The valorisation of the environment has led to the production of quality and traditional food products of the region. The fruits of this region, in addition to representing the basis of the cuisine proposed within the Resort, have given rise to a line of products such as jams, saffron pistils, artisanal honey and spreadable cocoa cream with evo oil.
